A healthy Christmas cake is all that the body and soul need.
While growing up, baking a healthy cake was out of the question. However, with time things have changed. Our perceptions of enjoying a delicious meal have also transformed. Now, just being delicious isn’t enough, it has to be healthy too. There has been a shift in trend in the last decade.
On my quest to find a healthy fruit cake recipe adorning my dining table, I came across this delicious recipe five years ago. And since then, my family has been hooked to it – especially my little ones.
Now, it’s here for you. Let’s celebrate happiness together.
Ingredients:
500 gm Dried fruits: figs; dates; apricots; sultanas; currants; cranberries (Your choice! Just ensure to chop big fruits into small pieces.)
125 gms Almond meal
67 grams coconut flour
75 grams mix of Walnuts, pecans, pistachios
An orange
5 Eggs
Butter or coconut oil
Mixed spice
1 tsp Cinnamon
1 tsp Vanilla
2 tsp Honey/maple syrup
Instructions:
Soak the fruits with some hot water so that they soften
Preheat your oven to 150 C.
Mix almond flour, coconut flour, bicarb, salt, mixed spice, lemon zest and cinnamon in a large mixing bowl. Add the nuts too.
In a second bowl, mix eggs, melted butter (or coconut oil), vanilla, and orange juice
Keep the batter thick
Now transfer all the ingredients to the baking tin
Bake for 60-70 minutes
Allow it to cool for 30 minutes
